Homemade Pesto Bruschetta's

Ingredients (Pesto)

  • 1 Large Bunch Basil
  • 1/2 Cup Almonds
  • 1/2 Cup Cashews
  • 1 Lemon
  • Olive Oil
  • Salt

Ingredients (Bruschetta)

  • Sourdough Bread, Toasted
  • Pesto
  • Basil Leaves, Torn
  • Red Onion, Finely Sliced
  • Tomato, Roughly Chopped
  • Salt & Pepper
  • Olive Oil

Method

  1. Add the almonds and cashews into a food processor and blend until roughly chopped
  2. Add in the remainder of the ingredients and blend until well combined, adding oil until you reach a nice consistency.
  3. Add salt to taste. Store in the fridge or use fresh! So delicious!
  4. To make your bruschetta's, combine basil leaves, tomato and red onion in a bowl. Add olive oil, salt and pepper and mix through. Serve on toast lathered with your fresh pesto! Yum!

Notes: I got an abnormally huge bunch of basil from the farmers market so with this recipe I would suggest using 2-3 bunches if you are buying them from the store or alternatively reduce the quantity of nuts added to the mix.
