Oven Baked Ricotta & Zucchini Frittata

Ingredients

  • 1 1/2 Cups Ricotta, Crumbled
  • 3 Zucchini, Grated, Liquid squeezed out
  • 1 Brown Onion, Finely sliced
  • 6 Sheets Filo Pastry
  • 1/2 Cup Thickened Cream
  • 6 Eggs, Whisked
  • 4 Tbsp. Grated Parmesan
  • Salt & Pepper
  • Olive Oil

Cooking Method

  1. Preheat you oven to 200 degrees and lightly grease a dish for your frittata or alternatively line with baking paper
  2. After making sure you have squeezed as much liquid as possible out of the grated zucchini's, add the rest of the filling ingredients into a bowl with a pinch of salt and pepper, except for the Parmesan and mix to combine
  3. Line your baking dish with the filo pastry, lightly brushing in between the layers with olive oil
  4.  Pour your mixture into the prepared dish, sprinkle the Parmesan over the top and bake for 30- 35 minutes or until the egg has set and the top is golden

This recipe is so delicious and great served hot or cold by itself or with a nice salad #looksgoodtastesgood
