Goats Cheese & Beetroot Salad with Rocket and Watercress

Ingredients

  • SERVES 4
  • 4 Beetroots, Washed and scrubbed
  • 1 Cup Beetroot Leaves, Washed
  • 250g Goats Cheese, Crumbled
  • 1 Cup Rocket, Washed
  • Olive Oil
  • Balsamic Vinegar
  • Salt & Pepper

Cooking Method

  1. Add your beetroots whole into a saucepan of water. Bring to the boil and cook for approximately 30 minutes for large beetroots
  2. Once your beetroots have cooked through, remove from the liquid and let cool. Roughly Chop and add into a salad bowl
  3. Add in your rocket, watercress, beetroot leaves and crumbled goats cheese
  4. Dress with olive oil, salt and pepper and a dash of balsamic
