Blue Granadia Fish Cakes with Lemon & Yoghurt Dressing

Ingredients

FISH CAKES

  • 4 Fillets Blue Granadia Fish, Skins Removed, Roughly Chopped
  • 1 Clove Garlic, Roughly Chopped
  • 1 Large Red Chilli, Roughly Chopped
  • 1 Small Piece Ginger, Skin Removed & Roughly Chopped
  • 1/2 Cup Coriander (Root & Leaf), Roughly Chopped
  • Salt & Pepper

SAUCE

  • 1 Cup Plain Yoghurt (Unsweetened)
  • 1 Lemon, Juiced & Zested
  • 1/4 Cup Coriander Leaves, Roughly Chopped
  • Salt & Pepper

Cooking Method

  1. Add the garlic, ginger, chilli and coriander into a food processor and blend a little bit but not until completely smooth, you still want some texture
  2. Tip out into a bowl and add the fish and mix in by hand or with a spoon until the mixture is nicely combined. Add salt and pepper
  3. Combine all of the ingredients for the yoghurt dressing and add salt and pepper to taste and set aside for serving
  4. With your hands make up the fish cakes and set aside ready to shallow fry
  5. Add a decent amount of cooking oil into a frying pan and shallow fry the fish cakes in batches
  6. Serve immediately with fresh lemon, dressing and a nice salad

I absolutely love fish cakes of any kind, they are so jam packed full of flavour and are such a nice fresh summers meal. Great for lunch or dinner with a nice big bowl of yummy salad!
