Creamy White Wine Muscles & Chorizo

Ingredients

  • 1 Kg Muscles
  • 1 Bottle White Wine (not sweet)
  • 1 Brown Onion, Finely Diced
  • 1 Chorizo, Finely Diced
  • 2 Cloves Garlic, Finely Diced
  • Handful Parsley, Roughly Chopped
  • 1 Red Chili, Finely Diced
  • 250ml. Cream

Cooking Method

  1. In a large saucepan, add some oil, onion, garlic and chorizo and fry off until for five minutes or until the onions are becoming translucent
  2. Add half of your wine and cook down on a high heat, then add the remaining wine and cream and bring up to a boil
  3. Add the muscles, mix them through and place a lid on top. Leave for five minutes, giving them a shake with the lid still on
  4. Check to see if thy have all opened, if not leave for a few more minutes and then serve with fresh herbs and chili.

So easy to make and an absolute crowd pleaser!
