Feta & Kale Omelette

Feta & Kale Omelette

Ingredients

SERVES 1-2

  • 2 Eggs, Whisked
  • 1 Kalette (mini kale), Leaves Pulled Off
  • 1 Tbsp. Feta, Crumbled
  • Milk, Small Dash
  • Salt & Pepper

Cooking Method

  1. Combine your eggs and milk in a bowl and add a pinch of salt and pepper
  2. Heat up a frying pan on high heat and add a tsp. of butter
  3. Once the butter has melted and is sizzling, add your egg mixture and reduce the heat
  4. Place a lid on the frying pan and cook at a very low heat until the omelette is coked through 
  5. Once your omelette is finished cooking, add your crumbled feta and the baby kale for a nice textural crunch

This is such an easy dish to whip up for breakfast or a snack on its own. Serve with or without bread. I just LOVE the colours of this dish and the baby kale leaves are so stunning!
