Vermicelli Rice Noodle Salad with Poached Chicken & Fresh Herbs

Ingredients

  • SERVES 4-6
  • 1 Packet Vermicelli Rice Noodles
  • 2 Chicken Breasts, Poached & Sliced
  • 2 Carrots, Cut into Match sticks
  • 1 Lebanese Cucumber, Finely Sliced
  • 1/4 Purple Cabbage, Finely Sliced
  • 1/4 Green White, Finely Sliced
  • 1/2 Red Onion, Finely Sliced
  • 2 Spring Onions, Sliced Diagonally
  • 1/2 Bunch Coriander, Roughly Chopped
  • 1/2 Bunch Mint, Roughly Chopped
  • 2 Tbsp. Sesame Seeds
  • DRESSING:
  • 1/2 Cup Rice Wine Vinegar
  • 1 Garlic Clove, Minced
  • Small Piece of Ginger, Minced
  • 2 Tsp. Caster Sugar
  • 2 Tbsp. Sweet Chili Sauce
  • 2 Tbsp. Fish Sauce
  • 1 Tbsp. Sesame Oil
  • 1 Tbsp. Olive Oil

Cooking Method

  1. Chop up all your ingredients and add to a large bowl
  2. Shred your poached chicken and mix everything together well
  3. In a small bowl add all of your ingredients for the dressing and combine well. Pour over your salad and mix through 

I absolutely love these rice noodle salads, so fresh and easy to prepare and one of my favourite things to eat!
