Potato, Leek & Fennel Soup

Ingredients

  • 6 Potatoes, Washed and Cut into 1/4
  • 2 Leeks, Washed, Finely Chopped
  • 1 Fennel Bulb, Finely Chopped
  • 4 Cloves Garlic, Finely Chopped
  • Salt & Pepper
  • Olive Oil
  • 3 Tbsp. Butter
  • Sour Cream (optional garnish)
  • Cheese (optional garnish)
 

Cooking Method

  1. Fill a saucepan with water, add your potatoes and bring to the boil. Cook until potatoes are soft enough to blend nicely
  2. In a frying pan, add your leeks, fennel and garlic with some oil, butter salt and pepper and cook down on a low heat without browning until they are nice and soft
  3. When the potatoes are finished cooking, leave the remaining water in the saucepan, add your leeks and fennel and put all ingredients into the blender and blend until smooth. Add salt and pepper to taste.
  4. Serve and garnish with sour cream, cheese and fennel sprigs (optional)
