Warm Chicken Salad with Egg, Kale & Zucchini
- 1 Zucchini
- 1 Bunch Kale
- 2 Chicken Breasts
- 4 Eggs
- 1 Red Onion
- 2 Garlic Cloves
Dressing: 1 tsp Dijon mustard, 1 tsp wholegrain mustard, 1 tsp honey, 4 tbsp. olive oil, squeeze of a lemon.
- Boil your eggs and cut your chicken into thick pieces and pan fry in olive oil. While your eggs are boiling steam your beans on top in a colander.
- Once the chicken is cooked remove from the pan and put in your onion roughly chopped into sections, chopped garlic and zucchini. Fry off and then add your kale and stir through for a few minutes.
- Chop up the chicken and add back into pan with the beans and mix everything through. Shell your eggs and cut longways in half and sprinkle with turmeric and paprika. Mix everything together in a big serving bowl and enjoy the salad warm or cold.
Dressing- Mix all your ingredients together and combine well, pour over your salad and mix through just before serving.
