Stuffed Flat Mushrooms with Feta, Mozzarella, Thyme & Oregano
- 2 Flat Mushrooms
- Fresh Thyme
- Red Onion
In a bowl mix together finely diced red onion with crumbled feta, chopped thyme and oregano, olive oil and pepper.
Put Mushrooms into baking dish and fill with the mixture and cover with freshly sliced mozzarella. Bake for approximately 15-20 minutes at 200 degrees.
Plate up with some fresh basil, crumbled feta and drizzle the sauce from the baking dish over the mushrooms.. Delicious! You can add a nice salad on the side or just eat by themselves.
I love this dish because it is so easy and simple to make and is so versatile.. you can put whatever ingredients you like in your stuffing mix and it always tastes great!
