Pulled Pork Burgers
- 1.5kg Pork Shoulder
- Smoky BBQ Sauce
- 1 Litre Chicken Stock
- 2 Tsp Paprika
- Purple Cabbage
- Green Cabbage
- Baby Rocket
- Whole Egg mayonaise
In a saucepan put stock, paprika, 3/4 cup BBQ Sauce (preferably a smoky kind) and then place the pork shoulder in. if the pork liquid doesn't submerge the pork just top up with water until it is covered. Put lid on and cook on medium to high heat fro 5 hours.
To make the slaw, finely chop the cabbages and carrot and add baby rocket. Mix together with a little bit of mayonnaise. (proportions all depend on how many burgers you want to make so you can decide this yourself).
After 5 hours of cooking, the pork shoulder should be falling apart.. remove from the liquid and with two forks shred the meat and return back to the BBQ sauce.
When ready to eat, put your buns under the grill for a few minutes and to assemble place the cheese on the bottom, followed by some smoky BBQ sauce, your shredded meat and then your slaw.... and then get ready to make a mess!
This pulled pork recipe is so delicious and is great because you can use the leftover meat for so many different easy meals over the following nights such as tacos, burritos, wontons, san choy bow, sandwiches and much more... or you can freeze the meat as well for your next burger session.
