Vegetable Quiche Loaf

Ingredients

  • 6 Eggs
  • 1 Small Sweet Potato, Cooked and Roughly Chopped
  • 2 Potato's, Cooked and Roughly Chopped
  • 1 Zucchini, Sliced
  • 1/4 Broccoli, Separate Small Pieces
  • 150ml Cream
  • Cheese For Top, Grated

Cooking Method

  1. Preheat oven to 180 degrees fan forced. Combine your eggs and cream and whisk together, add salt and pepper.
  2. In a loaf type oven dish, line with baking paper and begin layering your vegetables and egg mixture.
  3. Sprinkle cheese over the top and bake for 45 minutes.
  4. Serve on its own or with a nice fresh salad!

This dish is so flexible and is great for breakfast, lunch or dinner. You can have it by itself for a great healthy snack on the go or combine with a salad to make it a meal. Delicious and very versatile, you can add whatever vegetables are your favourite to make the filling.
