Coddled Eggs with Oregano, Thyme & Parsley
- Bread of your choice
- Finely chop up a decent amount of your herbs (must be fresh) and add 3/4 into the bottom of a small cast iron dish (or any small cooking dish) with a good amount of butter.
- Turn the element onto a very low heat and begin to melt the butter. Once it has melted add two eggs into each dish and sprinkle the remaining herbs on top and add salt and pepper.
- Cook your eggs on the lowest heat possible until the egg whits are cooked and they are ready to serve. Serve on toast of your choice.
These eggs are so delicious, I have loved them for years... there is something so delicious about the smell of the herbs cooking in the butter underneath the eggs and the aroma that it gives off. By cooking them this way the flavour of the herbs get all through the eggs and tastes so delicious!
