Coriander & Chili Chicken Skewers with Satay Sauce
- 4 Small Chili's
- 1/2 Bunch Coriander (Leaves & Root)
- 1 Cup Peanuts
- 1 Lemon
- Ginger (size of thumb)
- 2 Cloves Garlic
- 2 Tbsp Peanut Butter
- 2 Chicken Breast
- Combine all ingredients into food processor and blitz until you get the consistency you like. I like to blend the ingredients only a bit and take half of the mixture out and marinate the chicken and then wiz the rest of the mixture up until smooth for the sauce.
- If you can marinate the chicken the day before for the best results. With the remaining mix, add it to the frying pan and cook it down so that all the flavours really come out- you will start to smell this when it happens! Add Salt to taste. Cut the chicken breast into fairly thin slices and thread onto skewers then fry off for a few minutes each side. Serve with fresh coriander and lemon/ lime.
