Upside Down Caramel Starfruit Cake

These delicious fresh straight off the tree starfruit came from a friends orchard in Myocum, NSW. They are so beautiful when you cut them open to reveal their star shape, I came home with so many I was cooking with them and eating them for weeks! Delicious!

Ingredients

Topping

  • 100g Butter
  • 1 Cup Brown Sugar
  • 3 Starfruit

Cake

  • 1 Cup All Purpose Flour
  • 1 1/4 Almond Meal
  • 1 Tsp baking Powder
  • 1 Cup Caster Sugar
  • 1 Cup Unsalted Butter
  • 1 Cup Greek Yoghurt
  • 4 Large Eggs
  • 3 Starfruit

Cooking Method

  1. Preheat your oven to 170 degrees fan forced then start with getting the caramel layer complete because it is the base for the cake- melt your butter down in a saucepan with the sugar and let it dissolve. Cook the butter and sugar until it is bubbling nicely then remove from the heat and pour into the bottom of your cake tin.
  2. Once your caramel is evenly distributed in the bottom of the cake tin, cut up your starfruit up and arrange in the caramel, set aside.
  3. Then start with the cake mixture, beat together in an electric mixer or by hand your butter and sugar until light and creamy. Once the mixture is nice and fluffy, slowly add your eggs and beat into the mixture.
  4. In a separate bowl combine all your dry ingredients and start to mix in your wet ingredients until the batter is well combined and nice and thick. Once the batter is a nice consistency, finely dice up your starfruit and add then into your mixture.
  5. Pour your cake mix over the caramel and bake for 1 hour.
