Enoki & Oyster Mushrooms with Poached Egg On Toast
- Enoki & Oyster Mushrooms
- Fresh Eggs
- Bread of your choice
- Salt & Pepper
- Start off by putting a pot of water on the boil so that when the mushrooms are almost done the water is ready to poach your eggs. Put a nice chunk of butter into your frying pan and start by browning the oyster mushrooms as these take longer to cook than the Enoki mushrooms. Toss your chopped herbs into the mushrooms and at this stage throw in the Enoki to cook for the final few minutes.
- At this stage turn the boiling water down to a simmer and give it a swirl before you crack your eggs in and give them a few minutes to poach. Meanwhile put your toast in and plate up the mushrooms ready for your eggs (you will find that it is very easy to get a poached egg which binds together nicely when you have fresh eggs- it makes a huge difference to poaching). Now plate up your eggs and enjoy!
- This is such a very easy recipe to alter, you can cook your preferred style of eggs, change the herbs and also the mushrooms... I love trying new things and different ways of cooking so I chose to cook with these beautiful exotic mushrooms to mix things up and they were delicious!
