Pickled Red Onion

Ingredients

  • 2 Red Onions
  • Water
  • 2 Cups Whit Wine Vinegar
  • 2 tsp Salt
  • 2 tsp Sugar
  • 5 Sprigs Thyme
  • 1 tsp Fennel Seeds
  • 1 tsp Mustard Seeds
  • 1 tsp Peppercorns

Cooking Method

  1. Bring approx. 4 cups of water to the boil in a saucepan, meanwhile peel and slice the onions in fairly rings. Once the water is boiling add in the onion and blanch for 30 seconds to 1 minute (depending on the thickness of your onion rings) and immediately remove and drain.
  2. In a jar add your vinegar, herbs, salt and sugar and mix together to dissolve. Add in your onions and store the jar in the fridge.
  3. The pickled onions will be ready to eat after half an hour but are better after being refrigerated for a few hours.

You can use anything you like to pickle and can add all your favourite flavours such as herbs, spices, ginger, chili and garlic. Its such an easy thing to experiment with and try all different flavours.
