My Mum's Delicious Cold Beetroot Soup

Ingredients

SERVES 4 

  • 4 Large Beetroots
  • 1 Large Brown Onion, Finely Chopped
  • 2 Garlic Cloves, Finely Chopped
  • 2 Lemons, Juiced
  • Frozen Parsley Cubes (see note)
  • Sour Cream
  • Salt & Pepper

Cooking Method

  1. Boil, or faster still, pressure cook your beetroots until soft. Cool and rub off the skin
  2. In a frying pan, add some oil and saute the onions and garlic until soft and fragrant
  3. Add the beetroots, onion and garlic to a blender and blend until smooth
  4. Add salt and pepper to taste and liberal amounts of lemon juice according to individual taste
  5. Serve chilled with a dollop of sour cream and frozen parsley ice cubes

NOTE: Make the Parsley Cubes in advance by adding a little bit of water to finely chopped parsley and freezing it in ice cube trays. Theses are a great thing to have in the freezer and a great way to use up herbs that are about to go bad in the fridge, making your herbs last longer.
