Roast Lamb Salad with Quinoa, Mint, Orange & Rosemary

Ingredients

  • Leftover Lamb (or you can make lamb specifically for this salad)
  • 1/2 Cup Mint, Roughly Chopped
  • 2 Oranges, Peeled and Roughly Chopped
  • 1/4 Cos Lettuce, Roughly Sliced
  • 2 Cups Tri-Colour Quinoa, Cooked and Cooled
  • 1 Cucumber, Roughly Chopped
  • 2 Cups Lamb, Carved
  • 1 Sprig Rosemary, Roughly Chopped
  • 2 Tbsp. Olive Oil
  • 2 Tbsp. White Wine Vinegar
  • Salt & Pepper

Cooking Method

  1. Simply combine all of the ingredients in a large bowl and mix thoroughly before serving & Enjoy!
