Stuffed Roasted Eggplants
Ingredients
- SERVES 4
- 2 Eggplants,
- 500g Beef Mince
- 2 Cloves Garlic, Finely Chopped
- 1 Red Capsicum, Finely Chopped
- 1 Brown Onion, Finely Chopped
- 1 Tsp. Cumin Seeds
- 1 Cup Cheese, Grated
Cooking Method
- Preheat the oven to 180 degrees and add in your eggplants. Cook for 30-45 minutes depending on size. Remove from the oven, cut in half lengthways and scoop out the flesh
- In a frying pan, add some oil and add in your mince, onion and garlic and begin browning off on a high heat. Continue cooking, adding your cumin seeds, capsicum and eggplant flesh until the meat has fully cooked through and has browned nicely. Add salt and pepper to taste.
- Line a baking tray with baking paper and fill the halved eggplants with the mixture until nice and plump. Sprinkle cheese over the top
- Bake for 20-30 minutes until the cheese is golden and the eggplants have reheated nicely. Serve with greens
